Green Juice Recipe for Better Thyroid Health: Our Functional Formula for Digestion, Detox, and Hormone Support
Not every green juice recipe is created equal. A well-formulated, nutrient-dense blend can support the thyroid, liver, and adrenal glands to boost energy, digestion, and detoxification pathways. This is thanks to the vitamins, minerals, antioxidants, and other phytonutrient compounds found in the fruits, vegetables, herbs, and spices that make up a quality green juice.
That being said, many green juices are either deceptively high in sugar if they’re mostly fruit-based or contain compounds that block the absorption of key beneficial nutrients. Today we are guiding you through our functional formula for creating the best green juice, complete with a delicious go-to recipe.
Step 1: Choose the Best Greens to Optimize Nutrition
The first step in crafting your own green juice or choosing a pre-made option is identifying your greens. This is an important starting point to ensure you are maximizing the nutritional benefits of your juice. Green vegetables provide phytonutrients, antioxidants and chlorophyll that help support liver detoxification and protect the thyroid from oxidative stress.
However, some greens are concentrated sources of goitrogens and oxalates, which are plant compounds that interfere with the absorption of thyroid-supportive minerals. Goitrogens, found in raw cruciferous vegetables like kale, inhibit iodine absorption. Iodine is essential for thyroid hormone production. Without enough iodine, thyroid hormone levels drop, leading to slowed metabolism, fatigue, poor digestion, and other symptoms of hypothyroidism.
Oxalates are another compound that reduces mineral absorption, particularly calcium and iron. High oxalate intake can also contribute to kidney stone formation as well as chronic inflammation, especially inflammation of the thyroid, which plays a role in autoimmune Hashimoto’s thyroiditis. Foods high in oxalates include spinach, beets and beet greens, and Swiss chard.
We recommend cucumber, celery, and romaine lettuce as foundational greens for juicing. For an additional functional boost, consider adding parsley or cilantro for a fresh, vibrant flavor. These herbs are rich in antioxidants and act as natural chelators, helping bind and remove heavy metals for better detoxification.
Step 2: Add a Bitter Element for Bile Flow and Digestion
Bitter foods are powerful stimulants for liver function and bile flow. Bile, a digestive fluid produced by the liver and stored in the gallbladder, is imperative for fat digestion and thyroid health. When fat digestion suffers, this can lead to constipation, bloating, and deficiencies of fat-soluble vitamins A, D, E and K.
Beyond fat breakdown, bile also helps regulate cholesterol recycling and elimination. It plays an essential role in activating thyroid hormones by converting Free T4 into Free T3. When bile flow is sluggish or suboptimal, this can result in low Free T3 levels, elevated LDL cholesterol (the “bad” form), and digestive issues.
Bile production is a critical liver function that also plays a key role in liver detoxification, where toxins, excess hormones, and metabolic waste products are converted into forms that can be safely eliminated. This includes medications, heavy metals, mold mycotoxins, and byproducts of daily metabolism.
Our favorite bile-boosting additions for green juice include fresh ginger root, lemon (with the peel), a splash of apple cider vinegar, and dandelion greens. While some of these ingredients aren’t overtly bitter, they help stimulate bile production to support both digestion and detoxification. There is even research to suggest that ginger can help relieve persistent symptoms of hypothyroidism.
Step 3: Boost Vitamin C and Mineral Content for Thyroid and Adrenal Gland Support
The final step in creating a nutrient-dense green juice is doubling down on vitamin C and minerals. Adding lemon with the rind not only provides bitter compounds for bile stimulation, but it also delivers a robust dose of vitamin C.
Vitamin C is a key antioxidant for the adrenal glands, supporting the production of vital hormones like cortisol and protecting from oxidative stress. In fact, the adrenal glands contain among the highest concentrations of vitamin C in the body. Since vitamin C needs increase during times of acute stress as well as when cortisol is chronically elevated, replenishing it through fresh juice can be especially supportive.
Minerals such as sodium, potassium, and magnesium are equally important for adrenal and thyroid function. They also play critical roles in metabolism, hormone signaling, cellular hydration, and overall energy production, serving as the “spark plugs” for all chemical reactions in the body.
Potassium is particularly vital for thyroid function because it helps transport iodine into thyroid cells, enabling thyroid hormone production. Celery is a great source of potassium, with about 100 mg per stalk. Four celery stalks provide roughly the same amount of potassium as a banana or ¾ cups of coconut water. One serving of our favorite green juice recipe contains approximately 750 mg of potassium, which is nearly 30% of the Recommended Daily Intake (RDI) for women of reproductive age.

Ingredients
- 4 bunches Celery about 30 stalks including leaves
- 2 heads Romaine
- 1 bunch Parsley
- 2 whole Lemons
- 6 inches Ginger Root peeled
- 2 Granny Smith Apples
- 2 tbsp Apple Cider Vinegar
Instructions
- Wash all produce thoroughly
- Cut lemons and apples in half
- Feed all ingredients except apple cider vinegar through your juicer
- Add apple cider vinegar to juice and enjoy immediately for optimal freshness
