The best part is you can modify this recipe and add any of your favorite ingredients. For an extra boost of protein I would recommend topping it with chicken breast or tofu!

Mexican Burrito Bowls
Ingredients
bowl
- 1 cup cauliflower rice
- 1 handful arugula
- 1/2 cup black beans drained
- 1/4 cup yellow corn
- 1/4 cup cherry tomatoes
- 1/4 piece avocado
cilantro lime dressing
- 1 large bunch cilantro
- 2 tbsp lime juice
- 3 tbsp olive oil extra virgin
- 1 clove garlic
- 1 pinch salt
- 1 pinch pepper
Instructions

- Assemble all of the ingredients for the bowl in a large plate.
dressing
- For the dressing, add all ingredients to a blender, and blend until incorporated.
- Drizzle cilantro-lime dressing to the bowl.
- Enjoy!
