What makes this recipe so great is the delicious, mouth-watering, sweet and zesty honey mustard sauce.

After the sauce is made and the chicken is dipped, the oven does the rest for you! It’s that simple. All you need is to finish up tossing the Brussels sprouts and add them onto the baking sheet with the chicken. Boom. Just 15 minutes left and you are done my friend.

Honey Mustard Chicken and Brussels Sprouts

The perfect holiday dinner meal for you and your family! This chicken recipe is easy to prepare and the oven does the rest for you. The delicious Brussels sprouts add a great taste. Add your choice of starch on the side to complete this meal!

Ingredients
  

  • 1 lb Chicken thighs with skin
  • 1/3 cup Oil (avocado or olive)
  • 2 tbsps Dijon mustard
  • 1 tbsp Honey
  • 1 tbsp Lemon Juice
  • 3 cups Brussels sprouts trimmed and halved
  • 1/2 cup Red onion large, cut into wedges
  • Sea salt to taste
  • Black pepper to taste

Instructions
 

  • Preheat the oven to 425ºF (220ºC). Season the chicken thighs with salt and pepper.
  • In a large bowl, whisk together 3/4 of the oil, mustard, honey, and lemon juice. Use tongs to dip the chicken in the mixture, coating all sides. Place on a baking sheet and bake for 30 minutes.
  • While chicken is baking, in a medium sized bowl, toss the Brussels sprouts and onion with the remaining oil and season with salt and pepper.
  • Remove the baking sheet and scatter the Brussels sprouts and onion around the chicken. Place back in the oven for 15 minutes, until the sprouts are charred and the chicken is cooked through. Divide onto plates and enjoy!
