
Avocado & Smoked Salmon Omelette
Ingredients
- 3 Eggs
- ½ tbsp Extra Virgin Olive Oil
- 1½ oz Smoked Salmon
- ¼ Avocado
- 2 cups Spring Mix Lettuce
- 1 tbsp Chives chopped (optional)
Instructions
- In a bowl, whisk the eggs.
- Heat the oil in a pan over medium heat. Pour the eggs into the pan and cook until mostly set, about 1-2 minutes.
- Add the spring mix then flip over and cook for another 30 seconds.
- Transfer the omelette to a plate and top with the smoked salmon, avocado, and chives (optional). Enjoy!
