Avocado & Smoked Salmon Omelette

Ingredients
  

  • 3 Eggs
  • ½ tbsp Extra Virgin Olive Oil
  • oz Smoked Salmon
  • ¼ Avocado
  • 2 cups Spring Mix Lettuce
  • 1 tbsp Chives chopped (optional)

Instructions
 

  • In a bowl, whisk the eggs.
  • Heat the oil in a pan over medium heat. Pour the eggs into the pan and cook until mostly set, about 1-2 minutes.
  • Add the spring mix then flip over and cook for another 30 seconds.
  • Transfer the omelette to a plate and top with the smoked salmon, avocado, and chives (optional). Enjoy!
