
Vegan Mashed Potatoes in under 10 min
A classic you can't mess up. No one will know, how will they know?
Ingredients
- 2 medium sized sweet potatoes
- ½ tsp garlic powder
- 2 tbsp almond, coconut, oat milk
- 1 tbsp coconut oil
- sea salt to taste
Instructions
- Rinse sweet potatoes under running warm water and place on the plate. Microwave for 5-6 minutes to soften.
- Once microwaved, transfer to a medium sized pot. Add in 2 tbsp milk of choice, 1 tbsp coconut oil or butter, garlic powder and sea salt.
- Using a potato masher, thoroughly mash and mix together all ingredients.
- Let simmer for 3-5 minutes or until combined. Serve.
