Either it’s 5 de Mayo or you are just in the mood for Mexican food, this recipe is just what you need! It’s a delicious and filling meal, packed with nutrients and fiber to keep you full for hours. Great for meal prep and easy lunches because it takes under 30 minutes to make.

The best part is you can modify this recipe and add any of your favorite ingredients. For an extra boost of protein I would recommend topping it with chicken breast or tofu!

Mexican burrito bowls

Mexican Burrito Bowls

This meal is packed with plant-strong  nutrition and full of flavor. It takes under 30 minutes to make and will leave you satieted for hours.

Ingredients
  

bowl

  • 1 cup cauliflower rice
  • 1 handful arugula
  • 1/2 cup black beans drained
  • 1/4 cup yellow corn
  • 1/4 cup cherry tomatoes
  • 1/4 piece avocado

cilantro lime dressing

  • 1 large bunch cilantro
  • 2 tbsp lime juice
  • 3 tbsp olive oil extra virgin
  • 1 clove garlic
  • 1 pinch salt
  • 1 pinch pepper

Instructions

  • Assemble all of the ingredients for the bowl in a large plate.

dressing

  • For the dressing, add all ingredients to a blender, and blend until incorporated.
  • Drizzle cilantro-lime dressing to the bowl.
  • Enjoy!
