
Chocolate Chip Cookies
Ingredients
- 1 Pasture Raised Egg
- 1.5 cups Pamela's baking Mix
- 1 pinch Coarse sea salt
- 1 tsp Vanilla extract
- 1/2 bag Dark chocolate chips
- 3.5 tbsp Coconut oil (or grass-fed butter)
- 1/4 cup Coconut Sugar
- 1/4 cup Unsweetened Apple Sauce
Instructions
- Heat oven to 350 degrees F.
- Add dry ingredients into a small bowl and mix thoroughly.
- Crack eggs into a separate bowl and combine with vanilla extract, oil and applesauce. If it is cold, you might want to microwave the coconut oil/butter for 30 seconds prior to adding to the bowl to bring to a mostly liquid state. If microwaving, let cool for 10 - 15 minutes on counter top before pouring into dry ingredients.
- Pour wet ingredients into the dry bowl and combine evenly.
- Place a piece of unbleached parchment paper on top of your cookie sheet.
- Using an ice cream scooper, scoop the batter onto the cookie sheet. These should form small balls (don't press down). This mix should make 10 - 12 cookies.
- Let cook for 10 minutes or until very lightly browned. Remove from oven and let cool. Enjoy!
