Chocolate Chip Cookies

The ultimate better-for-you cookie that is sugar free, gluten free and dairy free. It's my personal favorite go-to cookie recipe!

Ingredients
  

  • 1 Pasture Raised Egg
  • 1.5 cups Pamela's baking Mix
  • 1 pinch Coarse sea salt
  • 1 tsp Vanilla extract
  • 1/2 bag Dark chocolate chips
  • 3.5 tbsp Coconut oil (or grass-fed butter)
  • 1/4 cup Coconut Sugar
  • 1/4 cup Unsweetened Apple Sauce

Instructions
 

  • Heat oven to 350 degrees F.
  • Add dry ingredients into a small bowl and mix thoroughly.
  • Crack eggs into a separate bowl and combine with vanilla extract, oil and applesauce. If it is cold, you might want to microwave the coconut oil/butter for 30 seconds prior to adding to the bowl to bring to a mostly liquid state. If microwaving, let cool for 10 - 15 minutes on counter top before pouring into dry ingredients.
  • Pour wet ingredients into the dry bowl and combine evenly.
  • Place a piece of unbleached parchment paper on top of your cookie sheet.
  • Using an ice cream scooper, scoop the batter onto the cookie sheet. These should form small balls (don't press down). This mix should make 10 - 12 cookies.
  • Let cook for 10 minutes or until very lightly browned. Remove from oven and let cool. Enjoy!
