Chocolate Chip Cookies

The ultimate guilt free cookie that is sugar free, gluten free and dairy free. The perfect trifecta for changing the game of "guilty pleasure".

  • ½ cup Gluten free oats
  • 2 Eggs
  • 4 tbsp Coconut Oil, unrefined
  • 1 tbsp Coconut butter
  • 1 cup Pamela's baking Mix
  • 48 grams Lakanto Monkfruit Sweetener
  • 23 grams Unsweetened fine shredded coconut
  • 14 grams Lily's dark chocolate chips
  • 1 tsp Cinnamon
  • 1 pinch Coarse sea salt
  • ¼ tsp Vanilla extract


  • Heat oven to 350 degrees F
  • Add dry ingredients into a small bowl and mix thoroughly
  • Crack eggs into a separate bowl and combine with vanilla extract, coconut oil and coconut butter. If it is cold, you might want to microwave the coconut oil and butter for 30 seconds prior to adding to the bowl to bring to a mostly liquid state
  • Pour wet ingredients into the dry bowl and combine evenly
  • Place a silicone baking sheet on top of cookie sheet
  • Using your hands, gently form very small balls and transfer to the cookie sheet. This mix should make 12 cookies
  • Let cook about 10 minutes or until very lightly browned. Remove from oven and let cool
